A biodynamic field blend from a single vineyard was harvested by hand. Fermentation with indigenous yeast to create a base wine which was then re-fermented in bottle (traditional method sparkling wine, Champagne method). Bottled with no fining, filtration or added sulphur.
Rich and round sparkling white wine made in the traditional Champagne method. Amazing concentration and precision of citrus fruit with brioche notes from the lees ageing. Top-notch!
