This classic and approachable style of Blanc de Blancs boasts a vibrant mousse and generous baked apple notes with a hint of honey on the nose. The palate leads with bright green apple flavours, giving way to fresh lime before finishing with delightfully subtle notes of vanilla and acacia honey. The wine has benefitted from an extended period of cellar ageing, refining the balance of the wine as well as developing its complex flavours.
